Using curd instead of cream is in accordance with the “ Traditional Ayurvedic Production Technique” in order to obtain maximum benefit. Ghee made from curd has the advantages of Fermentation,not in fat content but in micro-nutrients,that cannot be said of ghee made from cream.
This ghee is made from Pure Indian Desi Cows,free from Cross-Breeding(Jersey Cows). The yield of such cows is much lesser as compared to the Jersey Cows. The fat content is much lower compared to Jersey Cows,therefore much more milk is used to make this ghee(upto 7-8 liters for one jar).The whole process is labour intensive,therefore it is much more expensive than other brands available in market.
